What is thaumatin?

Thaumatin Powder is a white to cream color amorphous and odorless powder. Sweet and refreshing, no peculiar smell, long lasting. The sweetness is extremely strong, and its sweetness is on average 1600 times that of sucrose, but it depends on the dilution concentration: 5500-8000 times at 0.00011%: 3500 times at 0.001%, 1300 times at 0.01%, and 850 times at 0.02% times. Its aqueous solution is stable at pH 1.8-10, and its isoelectric point is approximately pH 11. Because it is a protein, it can be denatured by heating and lose its sweetness. It will also lose its sweetness when it is combined with tannins. The sweetness decreases in highly concentrated salt solutions. Very soluble in water, insoluble in acetone. It has a synergistic effect and improves flavor when used with sugar sweeteners.

Main ingredients

There are two main ingredients. Thaumatin I is a compound composed of 207 amino acids combined in a linear chain with a molecular weight of 22204; Thaumatin II is a protein composed of 198 amino acids combined with a molecular weight of 21000±500. Non-caloric sweeteners, flavorings. It should be used in combination with sugars such as sucrose in coffee, chocolate, beverages, desserts, baked products, etc. It has an enhancing effect on fragrance, and has obvious synergy when combined with spices, etc.

Traits

It is odorless and extremely sweet. The aqueous solution of 10% has a sweet taste with a sweetness threshold of 1.1mg/kg. That is, at the sweetness threshold concentration, it is about 5500 to 8000 times the sweetness of sucrose, and at a sweetness equivalent to a sucrose concentration of 6% to 10%, it is 2000 to 3000 times. If it is lower than 1.1mg/kg, the flavor can be enhanced. For example, 0.5mg/kg of somatame can reduce the mint flavor threshold by 1/10 to 1/3.

It is an alkaline protein with an isoelectric point of 11.5 to 12.5. Because it is a protein, it can be denatured when heated and lose its sweetness. If heated at 80 to 100°C, the sweetness will decrease by more than 50%. Heating above 100°C for a short time will have little effect. . It will also lose its sweetness when combined with tannins. The sweetness decreases in highly concentrated salt solutions.

Very soluble in water, soluble in 60% ethanol, insoluble in acetone. It has a synergistic effect and improves flavor when used with sugar sweeteners.

The sweetness of thaumatin is stable within the pH range of 2 to 10, heated below 100°C (or ultra-high temperature instant sterilization above 100°C), and is also stable against acid.
