Product Introduction
What is pullulan?
Pullulan powder is an extracellular water-soluble mucin polysaccharide similar to glucan and xanthan gum produced by the fermentation of Aureobasidium pullulan. It was invented by R. A special microbial polysaccharide discovered by Bauer.
Due to the unique structure and properties of this polysaccharide, it has broad application prospects in medicine, food, petroleum, chemical and other industries. Because it can be degraded and utilized by microorganisms in nature and does not cause environmental pollution, it is known as pollution-free plastic.
This polysaccharide is mainly composed of maltotriose connected through α-1,6 glycosidic bonds. The molecular weight is generally between 4.8x10 and 2.2x10 (the average molecular weight of commercial pullulan is 2x105. It is composed of approximately 480 maltotrioses). This polysaccharide has unique structure and properties, is structurally elastic and has relatively high solubility. Pullulan polysaccharide has strong film-forming properties, gas barrier properties, plasticity, and viscosity, and has excellent properties such as being easily soluble in water, non-toxic, harmless, colorless and odorless. It is widely used in medicine, food, petroleum, chemical and other industries. Broad application prospects. Because it can be degraded and utilized by microorganisms in nature and does not cause environmental pollution, it is known as pollution-free plastic. On May 19, 2006, the Ministry of Health issued Announcement No. 8. Pullulan is one of the four new food additive products, which can be used in candies, chocolate coatings, film tablets, compound seasonings and fruit and vegetable juice beverages. Used as coating agent and thickener.
Performance
Pullulan is non-toxic, safe, resistant to heat, salt, acid and alkali, has good viscosity and thermal stability, strong plasticity, film-forming ability, good air barrier and moisture permeability, and also has adhesion, adhesion, and decomposition properties. It can improve physical properties such as moisture retention, formability, spinning properties, etc.
What are the benefits?
Fruit and vegetable preservation
Pullulan has outstanding film-forming properties and can easily form a tough film. The permeability of the film is very low, which can effectively isolate the exchange of gas and water molecules, thereby preserving freshness. The preservation effect of pullulan is related to its molecular weight. The larger the molecular weight, the more stable the film formed. The storage life of fruits and vegetables treated with high molecular weight pullulan has been greatly improved. Some studies have pointed out that after apples were treated with 200,000 molecular weight pullulan, the water retention rate was still above 99% after 2 months. The mechanism of pullulan in preserving freshness is slightly different from that of chitosan. Chitosan has more antibacterial pathways. Therefore, the combined use of pullulan and chitosan can effectively improve the preservation of fruits and vegetables. Spend.
Edible film
Under the dual pressure of environmental degradation and resource scarcity, the development of environmentally friendly products continues to rise. Pullulan has good film-forming properties and does not require the assistance of other substances to form a film. Due to poor permeability, the edible film made of pullulan can well protect the contents and increase the shelf life. At the same time, it is generally Lulan polysaccharide is easily degraded in the environment and has outstanding advantages in the development of edible films. It is called "edible plastic".
Food processing
Compared with common microbial polysaccharides such as xanthan gum and gellan gum, pullulan has not been widely used in food processing. The former Ministry of Health only listed pullulan as a new food additive product in 2006. One, it is currently only used in a limited range such as seasonings, fruit and vegetable juice drinks, and protein solid drinks.
In fact, pullulan has shown good application advantages in many fields such as meat products and rice and flour products. As a major agricultural country, my country has abundant corn production as the raw material of pullulan, and its application in the food industry will be promising. .
Application direction
Pullulan powder has been widely used in medicine, food, light industry, and chemical industry. Pullulan is one of the four new food additive products and can be used in candies, chocolate coatings, film tablets, compound seasonings, and fruit and vegetable juices. Used as coating agent and thickening agent in beverages. Pullulan aqueous solution has a smooth and refreshing feeling and has the characteristics of improving taste, so it can be used as a food quality improver and thickener. Adding a small amount of pullulan during food processing can significantly improve food quality. For example, fish cakes can enhance the flavor and quality; adding a small amount of pullulan when making tofu can maintain the aroma of soybeans and simplify the process; soy sauce. Adding a small amount of pullulan to condiments, pickles, candied fish and shrimps, delicious foods, etc. can stabilize their viscosity, increase their stickiness and make them taste smoother.
(1) Filling materials and adhesive forming agents in the pharmaceutical industry and cosmetics.
(2) Food quality improver and thickener.
(3) Water-soluble packaging materials used to prevent oxidation.
(4) Low-calorie food raw materials for staple foods and pastries. Pullulan is a polysaccharide polymer composed of D-maltotriose units; a trisaccharide produced by α-Amalase digestion of Amalose. Pullulan has been used in studies evaluating bone tissue engineering. When the addition amount is 50% (wt.%), the addition of amylopectin increases the elongation at break of gelatin-based edible films.
Safety
According to the results of acute, subacute and chronic toxicity tests and mutagenicity tests of pullulan, even if the dosage of pullulan reaches the LD50 (semi-lethal dose) limit of 15g/kg, pullulan will not cause No biological toxicity or abnormal state occurs, so it is very safe to be used in the food and pharmaceutical industries.
