What is Wheat Gluten Powder
Wheat contains about 13% protein, which is mainly composed of albumin, globulin, gliadin and glutenin, and Pure Wheat Gluten mainly contains gliadin and glutenin, collectively known as storage protein (accounting for 80% of wheat protein dry base).
Due to the ductility of gliadin, glutenin is elastic and can form a network structure with water, thus it has excellent viscoelasticity, extension, water absorption, liposuction emulsification, film forming characteristics and light mellow taste or slightly grain flavor and other unique physical characteristics.

Function
Some peptides generated by incomplete hydrolysis of wheat protein have certain physiological functions, such as inhibiting hypertension and improving immunity.
Characteristic
Gliadin is malleable, and glutenin is elastic and can form a network structure with water, so it has excellent viscoelasticity, extension, water absorption, liposuction emulsification, film forming characteristics and light mellow taste or slightly grain flavor and other unique physical characteristics.
The gliadin molecules in wheat protein are spherical, with small relative molecular weight (25000-100000), extensibility, but low elasticity. Glutenin is a fibrous molecule with a large relative molecular weight (more than 100000). It is elastic but has little extensibility. The combination of the two gives wheat proteins unique viscoelasticity that is not found in other plant proteins.
The film forming of wheat protein is the direct expression of its viscoelasticity. Due to sufficient pressure to overcome part of the elasticity, CO2 or water vapor can form inside the gluten, so that the gluten is spongy or fibrous structure, the resulting gas is surrounded by continuous protein phase, the hole is filled with gas, forming a thin film gluten. High quality gluten can absorb twice as much water as gluten. This water absorption of Pure Wheat Gluten can increase product yield and prolong the shelf life of food.

Wheat Gluten Powder has a wide range of uses in food, can be used as a food preservative, emulsifier, foaming agent, chewing gum base material, used in wine, edible artificial casings, cheese, acid drinks, edible thin film, protein film food, baked food, breakfast cereal, pet food and meat products processing.
