It is almost insoluble in chloroform, ether and petroleum ether, insoluble in boiling water and ethanol, and soluble in alkaline solutions, pyridine and formamide. Rutin is stable in air, has antioxidant effects, and can absorb dissolved vitamin C, for example, it can stabilize vitamin C in fruit juice. It forms complexes with metal ions, especially with iron, copper, and aluminum, so it should not be stored in such metal containers, and generally reacts similarly to other flavonoids. It melts at a temperature of about 200°C, can be hydrolyzed in strong acid and alkalinity, and is unstable in color in alkaline foods.
Many plants produce rutin in large quantities to protect against ultraviolet radiation. The content of rutin in plants depends on the altitude of the place where they grow. The aboveground parts of plants have higher rutin content. As a flavonoid, it is formed by phenylpropanoid metabolism and polyketide metabolism. Specifically, naringenin formed in flavonoid metabolism is hydrogenated to flavonols, flavonols are hydroxylated to dihydroquercetin, then dehydrogenated to quercetin, and finally glycosylated. Rutin is widely present in the plant kingdom, in rue, bitter buckwheat, locust tree buds, catalpa leaves, tomato stems, leaves and seed shells, etc. Dry buckwheat when it is about to bloom contains about 3%. Jujube, hawthorn, ginkgo, wolfberry, motherwort, bupleurum, selfheal, aloe, Gynostemma pentaphyllum and other plants also contain rutin.
