What is Bulk citrus pectin powder?

It is a natural polysaccharide extracted from citrus fruits, and its main components are pectic acid and methyl pectic acid. It is characterized by high viscosity, good gel properties, and solubility in water and low concentration acidic environment. Extraction method:

Pectin was extracted from the peel of clementine. In the pectin extraction process, the extraction temperature (65-75℃), extraction time (1-3h) and extractant pH (2-8) were selected as variables. On this basis, suitable extraction conditions were selected, and pectins with different esterification degrees (20%-80%) were extracted. The basic physical and chemical properties, monosaccharide composition, molecular weight, infrared spectrum and rheological properties of these pectins were determined.

Research conclusions

Through response surface analysis, it was found that the extraction temperature and extractant pH were the main influencing factors of pectin yield, esterification degree and uronic acid content. By adjusting the pH value of the extractant, the team can extract pectin with different degrees of esterification, especially low-methylated pectin can be directly extracted under neutral and weakly alkaline conditions. Pectins with different degrees of esterification have different physical and chemical properties. The composition of high-methylated pectin is mainly galacturonic acid, while the monosaccharide composition of low-methylated pectin is mainly arabinose. At the same time, the team found that the molecular weight of low-methylated pectin is higher than that of high-methylated pectin, and the rheological properties of low-methylated pectin are highly sensitive to low-acid environments and calcium ions, showing good gelling ability.
