What is glycyrrhizic acid?

Glycyrrhizic Acid Powder is a triterpenoid saponin with a special amphiphilic structure. It comes from the roots and rhizomes of licorice and is the active ingredient extracted from licorice. There are two stereoisomers, 18α and 18β2. The pure product is white needle-shaped crystals with a very sweet taste. It is hydrolyzed into glycyrrhetinic acid and two molecules of glucuronic acid to exert pharmacological effects. It is also called glycyrrhizin, and its sweetness can reach 50 times that of sucrose. It and its derivative dipotassium glycyrrhizinate are often used as natural sweeteners. They have the characteristics of high sweetness, low cost, low calories, safety and non-toxicity, and are widely used as sweeteners in food. It is clinically used to treat peptic ulcers, skin diseases, liver diseases, etc. As a drug, it has anti-inflammatory and anti-allergic effects; as a sweetener, it is widely used in various foods.
