What is 6-Paradol?

6-Paradol is a bioactive phenolic substance in the ginger family. As a member of the curcumin family, it is one of the main active ingredients of ginger. It has a spicy taste and its chemical structure is similar to capsaicin, but its spiciness is only one hundredth to one thousandth of capsaicin and it is less irritating. Preparation method

1. Preparation of enone intermediate

Mix the raw materials vanillin, 2-nonanone and N, N-dimethylamide, react at 60℃-100℃, and control the liquid phase. When the raw material 2-nonanone is less than 0.2%, stop the reaction, then add glacial acetic acid aqueous solution, stir and cool to room temperature, filter, wash with water, and dry to obtain enone intermediate;

2. Preparation of ginger ketone phenol

Sodium metal, anhydrous sodium acetate and tetrahydrofuran are put into a reaction bottle. Under the protection of nitrogen, the enone intermediate dissolved in ethanol is added to the reaction bottle. After the reaction is completed, activated carbon is used for decolorization, filtration, and solvent recovery to obtain a light yellow oily substance, namely ginger ketone phenol.
